You can either automate a Gong call by creating a Jira ticket, or auto attach a call to a Jira ticket.

Confirm your Jira.
Enable Gong to push straight to an SFDC case
Use the Gong conversation object (recommended) and/or Gong's API.
Attach it to the case using process builder, or grab a Gong URL and insert it into a field on the case.
When using your existing Jira automation, take into account that the Gong field will be pulled in.
